Scrambled Eggs with Bitter Melon is probably the most common recipe where this bitter fruit is used. The recipe below is a very common way of preparing it.
3/4 cup bitter melon, halved & sliced
2 eggs
1/4 cup tomatoes, chopped
1 teaspoon garlic, chopped
1 tablespoon onion, chopped
salt (or fish sauce) & pepper, to taste
Instructions
1. Soak the sliced bitter melon in salt water for about 10 minutes. This is to lessen its bitterness.
2. Whisk the eggs and mix tomatoes, garlic and onion.
3. Fry the bitter melon lightly for 2 minutes.
4. Mix the eggs with tomatoes, garlic and onion.
5. Add salt and pepper.
This is good for 2 servings.
Additional note: You can add sardines or tuna in the recipe. All you have to do is to scramble it together with the eggs.
